Intel has always used big chips, for example Sapphire Rapids. Chiplets are for integration of various IPs and as a mean to compete with AMD. AMD's MI300 is also chiplet-based. I think the main reason people are using NVIDIA is the software for training at the moment. For inference, a lot of other solutions are faster than GPU.
