I have a zen book pro duo 15” oled which stopped working one day. The ASUS repair centre says a processor on my motherboard isn’t working the repair cost it 80% of the original cost 😅 what should I do ?

Why would it send 19V to the chip? It kinda sound like a bad desing, that instead of some kind of protection / fuse, it straight sends it to blow up the gpu :/
I really hope you fix the Nvidia, otherwise you are sending back a crap laptop lol

This may be dumb but why cant you desolder the gpu and put another one on? I thought they were just regular laptop gpu packages soldered to the motherboard.

You can do both. Disable the broken gpu on the old motherboard (and use it as a server) and put in a new motherboard in the laptop.
Dell : eh… maybe an IC shorted but let's just ask the customer to pay for an entire motherboard.
