  1. This was so nostalgic for me so thank you for sharing it with us. My father was a union journeyman meat cutter for most of his life. He grew up on a farm in rural coastal Virginia during the depression and after graduating high school moved to DC where he worked for his older brother at his meat (I think he processed chickens) stand. When his brother went into a different line of business, my father started working at a grocery chain in the suburbs of DC. I kept the knives he used and still have them (also have his union tie clasp), so when I saw the knife you were using it brought back so many memories including a picture of me standing in the meat cooler as a very young child next to a bunch of very large beef hanging from large hooks ready to be cut up for sale. We had so many fantastic dinners because there were guidelines that people actually followed back in the 60s about how long beef could stay on the shelves before it had to be thrown out. Before they would throw it out, they would offer it to store employees at a discount. He'd bring it home and freeze or cook it immediately. Every once in a while we'd get the really expensive cuts if no one bought them, but there was never a time when we didn't have some cool cut of some type of meat to eat. I'm glad you got a chance to have a fun experience with your sister! She sounds a lot like your mother. What a blessing!

  3. I saw you in Meg and Ben’s video a few days ago. It’s amazing how widespread this homestead community is. It’s like seeing old friends. I watch the Hollers and Bri from scratch-knew they were friends as well as the Rhodes. Y’all are all my faves for different reasons. Love your channel and all your content. You teach this 68 yr old great grandma new stuff everyday.

  4. I never liked getting up so early to get to the airport! I was stranded at Denver once coming back from Billings MT. I was going to sit in a chair til my flight in the morning! My daughter says no way. She booked me a hotel room. Safe travels, Becky!! ✈️❤

  5. Thank you for thos video. My husband and I did this about 5 years ago. We bought the pigs from a fried of my sons. Local grown. My husband did the processing.
    I am always amazed at how beautiful the cuts of meat are when all is complete.

  9. Congratulations on learning a new skill, it is always good to learn and understand the various cuts. My husband and I learned this 30 years ago when we were in Culinary School and it has been something that we have never forgotten and use as we choose our cuts as meats as well.

  12. Grew up in this area, born and raised in Asheville! It's a beautiful place. 😊 I did move to Greenville sc area though so we could have a bigger house and a little land! Cost of living in those mountains are high!
    I hopeful I can have that experience one day of learning to butcher/process an animal!
