Here in Brazil we cook beans so diferently! So interesting to see the same ingredients used in such different preparations!
If you would like to try it the brazilian way, here's what we do
soak beans overnight, put them in a pressure cooker with bay leafs and smoked sausage for about 20 minutes or until soft.
in a different pan: put some kind of oil or tallow, even crisco will do, an onion, cutted in any way you want. fry that onion until almost blackened. pour the bean mixture with everything on it, add salt to taste, boil it until there is no more foam on the top.

Hi Becky, love your canning videos! I don't can, but my family does a black bean "stew". In a pot (or slow cooker) you add the raw beans, a meat with bone (beef or pork are great), onion/garlic (you can leave whole), salt, and a bay leaf. The meat will fall off the bone, the beans are beautifully infused and the broth is incredivly delicious! We serve with white rice side. 'Crema', lime, and cilantro are good topping options too

A suggestion I learned from Fermented Homestead…add apple cider vinegar to further break down the bad stuff in beans. It really makes a difference.
For white chili I do whole frozen breasts because it's less work 😂. I also add ranch seasoning, and do both cream cheese and sour cream. I slow cook it on low for 8 hours, shredding at about 7 hours when I have time and remember. It's my favorite recipe for when I have energy in the morning, but know I won't want to make supper that night. My husband loves it with corn chips.
Is the main reason you can beans, rather than cook from dry as needed, because it is a time savor? Love your videos!

Becky or community, how do you find the altitude for your exact home? I live outside of a sea side town, however i drive up into the hills and live on a hill. I can look down on the town. I have the same zip code so if i ask it is sea level. But i can see i am not sea level. Is there a way to find the real altitude for my home? Or would it hurt to pressure can for a higher altitude to be safe? I really would like to start pressure canning however not knowing my altitude and having an glass stove top has prevented me. I now have a out door camp stove so now all i need to figure out is the altitude is all that is stopping me.
Dragon tongue beans are a bush bean variety. Maybe try rattlesnake beans as a substitute to pinto? They are delicious fresh and dried. I only grow Jade as a bush bean and Rattlesnake as a pole bean every year.
You may want to keep something in the back of your mind. I think you mentioned that you were going to renovate your kitchen at some point. A pot filler would be invaluable for your lifestyle. You could also think about adding a "summer kitchen" in your basement and having a pot filler there.
Becky, why don’t you use the slow cook function on your instant pot? You can then start dinner first. So sauté then switch to slow cook.
FYI. You can fill your jars with the liquid you cooked the beans in.

Even if you do the one hour soak you should still drain and rinse them and cook with fresh water. I'm glad to see you canning them this way. I think canning dry beans is a very unhealthy way of doing it and was surprised to see you doing it previously.

I have all of the ingredients to can dried beans but have hesitated to use the dried cold pack method touted by other homesteaders. I am impressed with the appearance of your finished beans and will can mine the same way. Thank you for the step by step instruction.
Hi Becky. Loved this canning video! Just a tip: I use my kettle to fill jars with hot liquid when I’m canning. Your electric kettle would work perfect!
Why wouldn't you use the liquid that you cooked your beans in…I noticed that on the black beans? Asking for future reference📝

I've never canned anything so I really dont know but did you dry the jars but then put wet lids on?
I read somewhere in either a canning book or pressure cooker book that you shouldn’t put your lids in dishwasher. ?

Hi Becky! If you are looking for a pole black bean to grow, i would recommend the cherokee trail of tears. i grew that this year and they were amazing! very prolific, and the best black bean flavor i've ever tried. i wish i had seen your video before i canned them because i did not do the pre-boiling step and they got a little bit messed up. they did not have enough water and expanded too much in the jar, so half of the beans are out of the brine. they are edible though! hahaha. oh well.

I always soak in more water than you are? What’s the reason you chose that? We do live at high altitude in a dry climate. Does that make a difference?
